Apple cinnamon cookies perfect for the holidays

‘Tis the season for all things apple and spice!

I have been meaning to share these apple spice cookies on the blog for a few weeks now. They are one of my favorite breakfast cookies I’ve made in a while and they don’t require a lot of sugar to sweeten.  

One of my main objectives with healthy baking is cutting the sugar and add nutrition. A lot of store-bought cookies are high in carbohydrates and lower on the protein end. These boast fiber, protein and of course antioxidants and vitamin C from the diced apples! Don’t forget the cinnamon which pairs seamlessly with this fall fruit and also helps to blunt the blood sugar response.

These are healthy enough to enjoy for breakfast, lunch or snack!

Nutrition:

Apples: Apples are high in vitamin C and fiber! There are over 7000 varieties but all boast comparable nutrition which will also be based on growing practices and region.

Oats: Oats are rich in fiber which helps lower cholesterol and aids digestion and elimination allowing food to pass through the digestive tract quickly and seamlessly.

Ingredients

1 cup oats
1 cup whole wheat flour
1 tsp cinnamon
1/4 tsp baking soda
1/2 cup applesauce
1/4 cup maple syrup
1 egg
2 tbsp butter, melted
1 cup apple, diced

Instructions

Preheat oven to 350 F
Line a baking sheet.
In a large bowl, combine all ingredients except apple. Fold apple in at the end.
Place one tablespoon of batter on the baking sheet and space evenly.
Bake for 15 minutes and allow to cool before serving.
